Fitted doors/architraves and skirting boards all round the house

This company fitted a kitchen for us 4 1/2 years go which was fine (flat pack) and we had no problems with this. We asked them to fit new doors, architraves and skirting boards in the Lounge, Kitchen, and upstairs doors and skirting on the landing. The quality of the wood used was appalling with more knot holes than wood and when querying this with one of them when they were fitting it, we were told this is what you get with wood. We stupidly let them carry on and when it was finished and we checked all the work, the woodwork on the skirtings and architraves was terrible. We wrote to them expressing our dissatisfaction (we still have copies), but all we got was a rude letter back. They also fitted a wooden shelf in the lounge and again the quality of wood was poor and sometime later it started to come off the wall. When we telephoned them, we were told "you will have to live with it". There were a lot of family problems at that time to take things further (I am sorry that we didn't). We were later told by someone who did some work for us that the "architraves" were in fact skirting boards. We have now before painting the woodwork again got to do a lot of work to get it up to scratch. How do companies like this get away with such bad workmanship.
